Kombinuje dv&#283; v&#283;ci, kter&#233; &#268;e&#353;i miluj&#237;: uzeniny a pivo. Oboj&#237; je tak n&#283;jak oby&#269;ejn&#233;, ale v kombinaci vznik&#225; n&#283;co velk&#233;ho.</p><p>Anebo u&#382; jste dost opil&#237; na to, abyste si to mysleli.</p><p>Historie tohoto pokrmu je zahalena mlhou &#269;asu &#8211; a pravd&#283;podobn&#283; i alkoholov&#253;mi v&#253;pary. Jedni tvrd&#237;, &#382;e jde o prad&#225;vn&#253; vyn&#225;lez hospodsk&#253;ch kucha&#345;&#367;, kte&#345;&#237; se sna&#382;ili vyu&#382;&#237;t v&#269;erej&#353;&#237; nedopit&#225; piva. Druz&#237; v&#283;&#345;&#237;, &#382;e recept vznikl jako zoufal&#253; pokus &#345;ezn&#237;k&#367; prodat &#353;pek&#225;&#269;ky, kter&#233; u&#382; nebyly dost &#269;erstv&#233;. Vyberte si.</p><p>Kr&#225;sn&#233; &#269;esk&#233; slovo bu&#345;t neznamen&#225; nic. Ale pozor, &#353;pek&#225;&#269;ek je definov&#225;n z&#225;konem. Mus&#237;: A) obsahovat minim&#225;ln&#283; 40 procent masa, b) maxim&#225;ln&#237; obsah tuku je 45 procent a c) nesm&#237; obsahovat tzv. separ&#225;t, tedy strojojov&#283; zpracovan&#233; zbytky. Od roku 2011 je &#353;pek&#225;&#269;ek na seznamu tradi&#269;n&#237;ch specialit Evropsk&#233; komise.</p><p>Ty nejlep&#353;&#237; &#353;pek&#225;&#269;ky jsou omotan&#233; prov&#225;zkem, jako kdyby to byly mal&#233; bal&#237;&#269;ky masn&#233;ho &#353;t&#283;st&#237;. A maj&#237; rodokmen: poprv&#233; byly p&#345;edstaveny publiku na Jubilejn&#237; zemsk&#233; v&#253;stav&#283; v roce 1891.</p><p>Co&#382; jsou v&#353;echno legitimn&#237; a zaj&#237;mav&#233; informace, ale lze naprosto pochopit, pokud jsou v&#225;m zcela bu&#345;t.</p><p>Tak&#382;e poj&#271;me rad&#353;i k pivu. M&#283;lo by b&#253;t &#269;ern&#233;. Jeho sametov&#225;, m&#237;rn&#283; nasl&#225;dl&#225; chu&#357; se s bu&#345;ty snoub&#237; tak, &#382;e to rozplak&#225;&#237; i otrl&#233;ho kucha&#345;e. A ano, m&#367;&#382;ete pou&#382;&#237;t i sv&#283;tl&#233; pivo, ale bude to jako s tchyn&#237; na n&#225;v&#353;t&#283;v&#283;. D&#225; se to, ale vy v&#237;te, &#382;e to nen&#237; v po&#345;&#225;dku. Asi jako ananas na pizze.</p><p>Pozor, a co se t&#253;&#269;e piva, m&#367;&#382;ete d&#225;t &#269;esk&#233; specialit&#283; sv&#283;tov&#253; nebo minim&#225;ln&#283; evropsk&#253; twist. A to t&#237;m, &#382;e zvol&#237;te  siln&#233; belgick&#233; pivo, nejl&#233;pe typu quadrupel. </p><p>Kdybyste cht&#283;li b&#253;t hodn&#283; posh, s&#225;hn&#283;te po Westvleteren 12, trapistick&#233;mu pivu, kter&#233; bylo vyhl&#225;&#353;eno n&#283;kolikr&#225;t za nejlep&#353;&#237; pivo sv&#283;ta. Ale lahvi&#269;ku po&#345;&#237;d&#237;te tak za 500 korun. Je to moc? Alternativou je St. Bernardus Abt 12, pivo i pro odborn&#237;ky t&#233;m&#283;&#345; k nerozezn&#225;n&#237; od Westvleterenu. Za &#269;tvrtinovou cenu.</p><p>A pro va&#353;e bu&#345;ty to bude polibek p&#345;&#237;mo z kl&#225;&#353;tera, tedy od Boha.</p><p>Anebo tam nalijte jako v&#382;dycky &#269;ernou des&#237;tku od Kozla, nebo jakoukoli jinou, proto&#382;e bu&#345;ty na pivu to unesou, tohle j&#237;dlo je drahokamem &#269;esk&#233; vynal&#233;zavosti. Pro&#269; to d&#283;lat slo&#382;it&#283;, kdy&#382; to jde jednodu&#353;e? </p><p>Ne, &#382;&#225;dn&#253; kucha&#345; za bu&#345;ty na pivu michelinskou hv&#283;zdu nedostane. Ale kdo mluv&#237; o hv&#283;zd&#225;ch, kdy&#382; se serv&#237;ruj&#237; bu&#345;ty a te&#269;e pivo? Na vn&#283;j&#353;&#237; stran&#283; ka&#382;dou p&#367;lku na&#345;&#237;zn&#283;te "na je&#382;ka" (vzor m&#345;&#237;&#382;ky) do hloubky asi 2-3 mm, aby l&#233;pe nas&#225;kly chu&#357;. </p></li><li><p>Cibuli oloupejte a nakr&#225;jejte na p&#367;lkole&#269;ka. &#268;esnek oloupejte a nakr&#225;jejte na pl&#225;tky nebo nadrobno.</p></li><li><p>Rozeh&#345;ejte hrnec na st&#345;edn&#237;m plameni. &#352;pek&#225;&#269;ky vlo&#382;te plochou stranou dol&#367; a kr&#225;tce je ope&#269;te (2-3 minuty), aby pustily tuk.</p></li><li><p>&#352;pek&#225;&#269;ky vyjm&#283;te a na rozpu&#353;t&#283;n&#233;m tuku orestujte cibuli dozlatova (asi 3-4 minuty). Pokud &#353;pek&#225;&#269;ky pustily m&#225;lo tuku, p&#345;idejte l&#382;&#237;ci s&#225;dla.</p></li><li><p>K cibuli p&#345;idejte &#269;esnek a nechte kr&#225;tce rozvon&#283;t (maxim&#225;ln&#283; 1 minutu), aby nezho&#345;kl.</p></li><li><p>Pokud chcete hust&#353;&#237; om&#225;&#269;ku, p&#345;isypte k cibuli l&#382;&#237;ci hladk&#233; mouky a kr&#225;tce orestujte (asi 1 minutu), aby se vytvo&#345;ila j&#237;&#353;ka.</p></li><li><p>P&#345;ilijte &#269;ern&#233; pivo, dob&#345;e prom&#237;chejte a nechte kr&#225;tce probublat, aby se odpa&#345;il alkohol (asi 2 minuty).</p></li><li><p>P&#345;idejte kr&#225;jen&#225; raj&#269;ata, raj&#269;atov&#253; protlak nebo ke&#269;up, javorov&#253; sirup nebo med, tymi&#225;n, km&#237;n, s&#367;l a pep&#345;. D&#367;kladn&#283; prom&#237;chejte a nechte kr&#225;tce probublat.</p></li><li><p>Vra&#357;te ope&#269;en&#233; &#353;pek&#225;&#269;ky do sm&#283;si, zakryjte pokli&#269;kou. Vlo&#382;te do trouby p&#345;edeh&#345;&#225;t&#233; na 180-200 &#176;C a pe&#269;te zakryt&#233; asi 30 minut.</p></li><li><p>Pot&#233; odklopte pokli&#269;ku a pe&#269;te dal&#353;&#237;ch 15-20 minut, aby om&#225;&#269;ka zhoustla a &#353;pek&#225;&#269;ky z&#237;skaly kr&#225;snou barvu. B&#283;hem pe&#269;en&#237; m&#367;&#382;ete prom&#237;chat, aby se chut&#283; dob&#345;e propojily. </p></li><li><p>Pod&#225;vejte s &#269;erstv&#253;m chlebem a p&#345;&#237;padn&#283; posypte nasekanou petr&#382;elkou. A p&#345;esn&#283; v takov&#253; moment p&#345;ich&#225;z&#237; na sc&#233;nu tohle j&#237;dlo: zap&#233;kan&#225; r&#253;&#382;e s kim&#269;i a s&#253;rem.</p><p>Nebo si to p&#345;edstavte je&#353;t&#283; jinak: potk&#225; se italsk&#225; babi&#269;ka s korejskou. Jedna &#345;&#237;k&#225; "Dej tam hodn&#283; s&#253;ra!", druh&#225; kontruje "Ale nezapome&#328; na kim&#269;i!". A v&#253;sledek? P&#345;ekvapiv&#283; dobr&#253;.</p><p>M&#367;&#382;e to b&#253;t asijsk&#233; risotto al forno, nebo taky korejsk&#233; arancini v l&#237;n&#233; verzi. Vrstva ochucen&#233; r&#253;&#382;e, vrstva s&#253;ra, zase r&#253;&#382;e, a navrch kim&#269;i se zape&#269;en&#253;m s&#253;rem. K&#345;upav&#233; na povrchu, kr&#233;mov&#233; uvnit&#345;, a v&#353;ude plno chuti.</p><p>Je to j&#237;dlo, kter&#233; nepot&#345;ebuje &#382;&#225;&#237;dnou zvl&#225;&#353;tn&#237; p&#345;&#237;le&#382;itost. Ned&#283;l&#225;te ho, kdy&#382; se dcera dostane na vysokou, nebo kdy&#382; m&#225;te s man&#382;elkou v&#253;ro&#269;&#237;. M&#367;&#382;ete ho j&#237;st k ve&#269;e&#345;i, jako pozdn&#237; sva&#269;inu, nebo dokonce k sn&#237;dani (ano, n&#283;kte&#345;&#237; &#8230;</p>

Pavel Alexandrovi&#269;, mu&#382;, jeho&#382; jm&#233;no dnes nese jeden z nejslavn&#283;j&#353;&#237;ch recept&#367; na sv&#283;t&#283;, byl zaj&#237;mav&#225; postava: slou&#382;il jako vojensk&#253; gener&#225;l, byl &#269;lenem st&#225;tn&#237; rady a proslul jako znalec um&#283;n&#237; a mecen&#225;&#353;. Dala se koupit ob&#269;as v asijsk&#253;ch obchodech, te&#271; ji celkem nov&#283; nab&#237;zej&#237; i supermarketov&#233; &#345;et&#283;zce, t&#345;eba Lidl. A za dobrou cenu! </p><p>Jen&#382;e kumquat je takov&#253; mal&#253; rebel mezi citrusy. Na rozd&#237;l od sv&#253;ch v&#283;t&#353;&#237;ch p&#345;&#237;buzn&#253;ch m&#225; sladkou slupku a kyselou du&#382;inu, tak&#382;e se &#269;erstv&#253; j&#237; p&#345;&#237;mo se slupkou. A z&#225;rove&#328; to z n&#283;j d&#283;l&#225; perfektn&#237;ho kandid&#225;ta pro experimentov&#225;n&#237; v kuchyni. A i proto se stal hlavn&#237; hv&#283;zdou sal&#225;tu, kter&#253; &#382;ena p&#345;inesla jako n&#225;pad z kucha&#345;sk&#233;ho kurzu Zde&#328;ka K&#345;&#237;&#382;ka (ten ho prezentoval jako &#8220;Madeiru na tal&#237;&#345;i&#8221;), a my ho &#8220;doimprovizovali&#8221; do t&#233;hle podoby.</p><p>Je to klasick&#253; p&#345;&#237;klad &#8220;fusion kuchyn&#283;&#8221;, tak&#382;e dr&#382;&#237;me prst na tepu doby &#382;&#225;daj&#237;c&#237; diverzitu. M&#225;me tu &#345;eckou Metaxu, kter&#225; nen&#237; jen tak ledajak&#253; alkohol - je to destil&#225;t vyr&#225;b&#283;n&#253; z v&#237;na a bylinek, kter&#253; v sob&#283; nese tis&#237;ciletou tradici st&#345;edomo&#345;sk&#233; kultury (a nov&#283; je v nab&#237;dce i ve verzi &#8220;orange&#8221;). Pak tu m&#225;me citr&#243;novou tr&#225;vu, bez kter&#233; by se neobe&#353;la vietnamsk&#225; kuchyn&#283;, a edamame, mlad&#233; s&#243;jov&#233; lusky, kter&#233; jsou v Japonsku popul&#225;rn&#237; u&#382; od obdob&#237; Edo.</p><p>Co d&#283;l&#225; tento sal&#225;t tak v&#253;jime&#269;n&#253;m? Je to pr&#225;v&#283; ta neobvykl&#225; kombinace va&#345;en&#253;ch kumquat&#367;, kter&#233; d&#237;ky spojen&#237; s cukrem z&#237;skaj&#237; t&#233;m&#283;&#345; marmel&#225;dovou konzistenci, a &#269;erstv&#253;ch, kter&#233; do sal&#225;tu p&#345;inesou sv&#283;&#382;&#237; kyselost. Je to jako m&#237;t v ka&#382;d&#233;m soustu mal&#233; p&#345;ekvapen&#237; - nikdy p&#345;esn&#283; nev&#237;te, jestli v&#225;s &#269;ek&#225; sladk&#225; nebo kysel&#225; nota.</p><p>A pak jsou tu opra&#382;en&#233; pekanov&#233; o&#345;echy, kter&#233; cel&#233;mu sal&#225;tu dod&#225;vaj&#237; nejen k&#345;upavou texturu, ale i ur&#269;itou "americkou" dimenzi. V&#353;ak tak&#233; pekan p&#367;vodn&#283; poch&#225;z&#237; od p&#367;vodn&#237;ch obyvatel Severn&#237; Ameriky, kte&#345;&#237; ho pova&#382;ovali za posv&#225;tn&#253; dar od boh&#367;. V tomto sal&#225;tu hraje roli elegantn&#237;ho moder&#225;tora mezi asijsk&#253;mi a st&#345;edomo&#345;sk&#253;mi chut&#283;mi.</p><p>Cel&#253; tenhle sal&#225;t je vlastn&#283; tak trochu jako dobr&#253; film - m&#225; hlavn&#237;ho hrdinu (kumquat), zaj&#237;mav&#233; vedlej&#353;&#237; postavy (Metaxa, citr&#243;nov&#225; tr&#225;va) a p&#345;ekvapivou z&#225;pletku (kombinace tepl&#233;ho a studen&#233;ho, sladk&#233;ho a kysel&#233;ho). A stejn&#283; jako u dobr&#233;ho filmu, i tady plat&#237;, &#382;e &#269;&#237;m v&#237;ckr&#225;t ho "vid&#237;te", t&#237;m v&#237;c detail&#367; objev&#237;te.</p><p>A jestli si &#345;&#237;k&#225;te, &#382;e to zn&#237; slo&#382;it&#283; - nen&#237;. M&#367;&#382;ete ho serv&#237;rovat jako p&#345;edkrm nebo p&#345;&#237;lohu, my si ho dali s grilovan&#253;m hov&#283;z&#237;m pupkem. Kombinace to byla nezvykl&#225;, ale o to v&#237;c p&#367;sobiv&#225;.</p><p>Mimochodem, pokud nem&#367;&#382;ete sehnat n&#283;kterou z ingredienc&#237;, nebojte se experimentovat. M&#237;sto Metaxy m&#367;&#382;ete pou&#382;&#237;t jin&#253; aromatick&#253; alkohol (ostatn&#283; Zden&#283;k K&#345;&#237;&#382;ek tam m&#283;l p&#367;vodn&#283; lik&#233;r p&#345;&#237;mo z kumquatu, pou&#382;&#237;t m&#367;&#382;ete t&#345;eba i slavn&#253; Grand Marnier), edamame lze nahradit zelen&#253;m hr&#225;&#353;kem, a pokud nese&#382;enete kumquaty, &#8220;vra&#382;te tam&#8221; t&#345;eba mix dvou nebo t&#345;&#237; mandarinek a jednoho citr&#243;nu. P&#345;idejte rozdrcenou citr&#243;novou tr&#225;vu a nechte 2 hodiny louhovat pro z&#237;sk&#225;n&#237; pln&#233; chuti. </p></li><li><p>Kumquaty omyjte a nakr&#225;jejte na kole&#269;ka. V&#283;t&#353;&#237; peci&#269;ky odstra&#328;te. V&#283;t&#353;inu kumquat&#367; dejte do rendl&#237;ku s vodou a cukrem, n&#283;kolik si nechte stranou do sal&#225;tu. Jednak je babi&#269;ka va&#345;ila &#269;asto, proto&#382;e je m&#283;l d&#283;da r&#225;d, a pak mi tro&#353;ku vadila chu&#357; om&#225;&#269;ky. Byla to takov&#225; fale&#353;n&#225; rajsk&#225;, m&#237;&#328; sladk&#225; a irituj&#237;c&#237; paprikovou cut&#237;. Taky mn&#283; moc nechutnala r&#253;&#382;e, proto&#382;e jsem byl knedl&#237;kov&#233; d&#237;t&#283;. Ale z &#250;pln&#283; stejn&#253;ch d&#367;vod&#367; dneska pln&#283;n&#233; papriky naopak miluju.</p><p>Je to jedno z t&#283;ch chut&#237;, kter&#233; se v&#225;m zak&#243;duj&#237; v mozku, a kdy&#382; se s j&#237;dlem vr&#225;t&#237;, tak ty vzpom&#237;nky samy nab&#237;haj&#237;. Jako kdy&#382; otev&#345;ete star&#233; fotoalbum. Jen m&#237;sto fotek tam najdete mlet&#233; maso, r&#253;&#382;i a spoustu vzpom&#237;nek. </p><p>Pln&#283;n&#233; papriky se d&#283;laj&#237; v mnoha sv&#283;tov&#253;ch kuchyn&#237;ch. Od mexick&#233;, p&#345;es evropsk&#233; St&#345;edomo&#345;&#237; a&#382; po &#268;&#237;nu. V&#353;ude trochu jinak. &#268;esk&#225; inspirace je asi z Balk&#225;nu a pak hlavn&#283; z Ma&#271;arska. Jeden z nejzn&#225;m&#283;j&#353;&#237;ch ma&#271;arsk&#253;ch liter&#225;t&#367; (se slovensk&#253;mi ko&#345;eny) ho v&#353;ak taky nevymyslel. To se p&#345;ipisuje jeho m&#233;n&#283; zn&#225;m&#233;mu kolegovi Jozsefu Sz&#233;kelymu.</p><p>A jako mnoho jin&#253;ch j&#237;del vzniklo i toto vlastn&#283; omylem. T&#345;iadvacetilet&#253; Pet&#337;fi a o dva roky mlad&#353;&#237; Sz&#233;kely se se&#353;li v restauraci Koml&#243; Kert v Pe&#353;ti, kter&#225; je dnes sou&#269;&#225;st&#237; Budape&#353;ti. Bylo d&#233;le po poledni a hostinsk&#253; u&#382; nem&#283;l &#382;&#225;dn&#233; z p&#367;vodn&#283; p&#345;ipraven&#253;ch j&#237;del. V kuchyni bylo jen va&#345;en&#233; kysan&#233; zel&#237; a zbytek vep&#345;ov&#233;ho gul&#225;&#353;e, v Ma&#271;arsku samoz&#345;ejm&#283; &#8220;perkeltu&#8221;.</p><p>&#8220;Sm&#237;chejte to a serv&#237;rujte!&#8221;, prohl&#225;sil Sz&#233;kely, co&#382; byla v&#283;ta pro seged&#237;nsk&#253; gul&#225;&#353; v&#253;znamem srovnateln&#225; s Galileovou &#8220;A p&#345;ece se to&#269;&#237;!&#8221; pro astronomii. Kdykoli jsme za n&#237;m p&#345;ijeli, bylo jasn&#233;, &#382;e minim&#225;ln&#283; jeden ve&#269;er str&#225;v&#237;me z gener&#225;lem Tso.</p><p>Ten &#269;lov&#283;k opravdu existoval. A jakkoli ho v Americe a &#269;&#225;ste&#269;n&#283; i ve sv&#283;t&#283; proslavilo ku&#345;e, nem&#283;l s t&#237;mhle j&#237;dlem nic spole&#269;n&#233;ho. Ani netu&#353;&#237;me, co r&#225;d jedl. <a href="https://www.ted.com/talks/jennifer_8_lee_the_hunt_for_general_tso?language=en">Kdy&#382; americk&#225; novin&#225;&#345;ka Jennifer 8. Lee hledala v provincii Chunan jeho rodnou vesnici</a>, dostala rukou kreslenou mapku v restauraci, kter&#225; se py&#353;nila nab&#237;dkou &#8220;mimo&#345;&#225;dn&#283; kvalitn&#237;ho ps&#237;ho masa&#8221;.</p><p>Ale o tom a&#382; pozd&#283;ji.</p>

P&#345;id&#225; se k nim dokonce i jeho nejbli&#382;&#353;&#237; p&#345;&#237;tel, sed&#237;c&#237; vedle n&#283;j. &#8220;I ty, Brute?&#8221;, zvol&#225; zran&#283;n&#253;m hlasem Caesar.</p><p>No a tak to cel&#233; vzniklo, ano, &#345;e&#269; je o slavn&#233;m Caesarov&#283; sal&#225;tu.</p><p>Ach, jist&#283;&#382;e to nen&#237; pravda. </p><p>Asi ka&#382;d&#253; v&#237;, &#382;e sal&#225;t se sice jmenuje po Caesarovi, ale ne tom, kter&#233;ho si ka&#382;d&#253; vybav&#237;. Jakkoli hlavn&#237; surovinou je &#345;&#237;msk&#253; sal&#225;t, co&#382; je matouc&#237;. P&#345;&#237;b&#283;h tohoto j&#237;dla je v&#353;ak mo&#382;n&#225; je&#353;t&#283; zaj&#237;mav&#283;j&#353;&#237;, ne&#382; kdyby se jmenoval po &#345;&#237;msk&#233;m c&#237;sa&#345;i.</p><p>Cardiniovi p&#345;ipluli do Ameriky n&#283;kdy koncem I. sv&#283;tov&#233; v&#225;lky. Otev&#345;eli si restauraci nejprve v Sacramentu a pozd&#283;ji v San Diegu. Tedy v Kalifornii. Ale kdy&#382; v USA za&#269;ala prohibice, rozhodli se p&#345;esunout sv&#367;j podnik do Tijuany v sousedn&#237;m Mexiku.</p><p>Legenda &#345;&#237;k&#225;, &#382;e slavn&#253; sal&#225;t vznikl na sv&#225;tek Dne nez&#225;vislosti, tedy 4. &#269;ervence 1924. Z&#225;jem host&#367; byl od r&#225;na mimo&#345;&#225;dn&#253;, tak&#382;e restaurace spo&#345;ebovala t&#233;m&#283;&#345; v&#353;echny suroviny. Cardiniovi se rozhodli improvizovat, a host&#367;m nab&#237;dli pokrm tvo&#345;en&#253; &#269;erstv&#253;m &#345;&#237;msk&#253;m sal&#225;tem, syrov&#253;m &#382;loutkem, parmez&#225;nem a p&#225;r dal&#353;&#237;mi ingrediencemi, kter&#233; zbyly z p&#345;&#237;pravy jin&#253;ch j&#237;del.</p>

R&#253;&#382;e byla &#8220;na rizoto&#8221; z Marks and Spencer, ale ur&#269;it&#283; by to fungovalo i s jin&#253;mi.</p><p>P&#225;rov&#225;n&#237; s v&#237;nem: nab&#237;z&#237; se n&#283;jak&#233; Nech&#225;m st&#225;t, klidn&#283; v pokojov&#233; teplot&#283;.</p></li><li><p>Do dal&#353;&#237;ho hrnce d&#225;m olej nebo m&#225;slo. Dv&#283; cibule pokr&#225;j&#237;m na kousky. Orestuju je v hrnci, asi tak p&#283;t a&#382; deset minut. Cibule by nem&#283;la zhn&#283;dnout. </p></li><li><p>P&#345;id&#225;m do hrnce dv&#283; l&#382;&#237;ce papriky a nech&#225;m asi minutu &#353;kv&#237;&#345;it. Pak podliju cibuli b&#237;l&#253;m v&#237;nem a dv&#283; t&#345;i minuty nech&#225;m odpa&#345;it alkohol. Dob&#345;e m&#237;ch&#225;m, aby  nic nez&#367;stalo na dn&#283; nebo po stran&#225;ch hrnce. P&#345;id&#225;m ko&#345;en&#237; (p&#225;r kuli&#269;ek pep&#345;e, nov&#233;ho ko&#345;en&#237; a bobkov&#253; list). Nakonec zaliju v&#253;varem, ve kter&#233;m jsem va&#345;il maso. Va&#345;&#237;m pak asi 20 minut.</p></li><li><p>Zahust&#237;m om&#225;&#269;ku kousky b&#237;l&#233;ho chleba, kter&#233; jsem p&#345;edt&#237;m rukou rozemnul najemno. Va&#345;&#237;m dal&#353;&#237;ch 20 minut, te&#271; u&#382; za st&#225;l&#233;ho m&#237;ch&#225;n&#237;.</p></li><li><p>Ty&#269;ov&#253;m mixerem rozmixuju om&#225;&#269;ku p&#345;&#237;mo v hrnci. Pak ji p&#345;es s&#237;tko proced&#237;m, aby byla opravdu jemn&#225;. Vr&#225;t&#237;m zp&#225;tky do hrnce. P&#345;id&#225;m podle chuti je&#353;t&#283; smetanu, p&#345;&#237;padn&#283; p&#345;isol&#237;m, a d&#225;m do hrnce maso, a chv&#237;li spole&#269;n&#283; va&#345;&#237;m. Pak je hotovo.</p></li></ol><p><strong>Postup pro knedl&#237;ky:</strong></p><ol><li><p>Nakr&#225;j&#237;m na kosti&#269;ky precl&#237;k a d&#225;m do misky. </p></li><li><p>Zaliju vla&#382;n&#253;m ml&#233;kem a rozpu&#353;t&#283;n&#253;m m&#225;slem. P&#345;id&#225;m &#382;loutky (pokud se mi na z&#225;v&#283;r nechce d&#283;lat sn&#237;h, tak m&#367;&#382;u cel&#225; vaj&#237;&#269;ka). Posol&#237;m, nasypu pokr&#225;jenou petr&#382;elovou na&#357; a m&#367;&#382;u nastrouhat trochu mu&#353;k&#225;tov&#233;ho o&#345;&#237;&#353;ku. </p></li><li><p>Vznikl&#233; t&#283;sto m&#367;&#382;e m&#237;t tekut&#283;j&#353;&#237; konzistenci, proto&#382;e ho budu va&#345;it ve f&#243;lii. Ale m&#367;&#382;u ho v p&#345;&#237;pad&#283; trochu zahustit t&#345;eba op&#283;t b&#237;l&#253;m toustov&#253;m chlebem, podobn&#283; jako om&#225;&#269;ku.</p></li><li><p>Na z&#225;v&#283;r vm&#237;ch&#225;m sn&#237;h, pokud jsem si ho ud&#283;lal.</p></li><li><p>Nech&#225;m deset minut vychladnout v lednici nebo v kuchyni na stole.</p></li><li><p>Knedl&#237;ky bal&#237;m do potravinov&#233; f&#243;lie, kterou zakrout&#237;m na konc&#237;ch, tak&#382;e vzniknou takov&#233; men&#353;&#237; &#353;i&#353;ky. Aby se f&#243;lie ve vod&#283; neropzbalila, zabal&#237;m pak je&#353;t&#283; knedl&#237;k do alobali. Op&#283;t na konci zakrout&#237;m, vznikne takov&#253; velk&#253; &#8220;bonb&#243;n&#8221;. Pak na p&#225;nev nasypeme houby, nakr&#225;jen&#233; na pl&#225;tky. Jen klobou&#269;ky, no&#382;i&#269;ky jsme p&#345;edt&#237;m odstranili, proto&#382;e jsou moc tvrd&#233;. Kdy&#382; nem&#225;me houby shiitake (ho&#382;evnatec jedl&#253;), m&#367;&#382;eme pou&#382;&#237;t &#382;ampi&#243;ny, nebo i b&#283;&#382;n&#233; lesn&#237; houby.</p></li><li><p>Houby posol&#237;me a opep&#345;&#237;me. Osmahneme v oleji, asi 10 a&#382; 12 minut, dokud nezhn&#283;dnou. M&#237;ch&#225;me, aby se nep&#345;ip&#225;lily. Na m&#237;rn&#233;m ohni.</p></li><li><p>P&#345;id&#225;me najemno nakr&#225;jenou cibuli a najemno nakr&#225;jen&#253; &#269;esnek, nech&#225;me asi minutu sma&#382;it, ne&#382; cibule zm&#283;kne. Pak zalijeme v&#237;nem. Za st&#225;l&#233;ho m&#237;ch&#225;n&#237; va&#345;&#237;me asi minutu a&#382; dv&#283;, a&#382; se &#269;&#225;st v&#237;na odpa&#345;&#237;.</p></li><li><p>Mo&#382;n&#253; trik: p&#345;id&#225;m jednu l&#382;i&#269;ku italsk&#233;ho sal&#225;mu nduja, kter&#253; om&#225;&#269;ce dod&#225; pikantnost a chu&#357;. Ale nen&#237; to &#8220;povinn&#233;&#8221;.</p></li><li><p>P&#345;id&#225;me vodu nebo v&#253;var, znovu osol&#237;me (u&#382; m&#367;&#382;eme ochutnat a p&#345;idat i dal&#353;&#237; ko&#345;en&#237; podle chuti), p&#345;ivedeme k varu a ztlum&#237;me ohe&#328;. Za ob&#269;asn&#233;ho m&#237;ch&#225;n&#237; va&#345;&#237;me asi 5 minut, ne&#382; m&#225; sm&#283;s na p&#225;nvi kr&#233;movitou konzistenci.</p></li><li><p>Uva&#345;&#237;me v osolen&#233; vod&#283; t&#283;stoviny. Podle n&#225;vodu, tak, aby byly <em>al dente</em>, rozhodn&#283; ne rozva&#345;en&#233;. Asi 7 a&#382; 8 minut. Pak vodu zced&#237;me a p&#345;id&#225;me t&#283;stoviny do p&#225;nve. J&#225; to m&#225;m v&#283;t&#353;inou s mno&#382;stv&#237;m vyzkou&#353;en&#233; tak, &#382;e se voda vyva&#345;&#237;, tak&#382;e t&#283;stoviny ani neced&#237;m. Za st&#225;l&#233;ho m&#237;ch&#225;n&#237; va&#345;&#237;me je&#353;t&#283; p&#225;r minut, ne&#382; m&#225; obsah p&#225;nve spr&#225;vnou konzistenci.</p></li><li><p>Vypneme va&#345;i&#269;. D&#225;me do t&#283;stovin studen&#233; m&#225;slo a m&#237;ch&#225;me, aby se rozpustilo. T&#283;stoviny z&#237;skaj&#237; vynikaj&#237;c&#237; chu&#357; i konzistenci. Pak do nich je&#353;t&#283; vm&#237;ch&#225;me najemno nastrouhan&#253; s&#253;r a p&#345;&#237;padn&#283; i najemno nasekanou petr&#382;elku (nen&#237; povinn&#233;).</p></li><li><p>&#268;&#225;st s&#253;ru i petr&#382;elky si m&#367;&#382;eme nechat na posyp&#225;n&#237;. Serv&#237;rujeme b&#283;hem n&#283;kolika minut, kdy u&#382; t&#283;stoviny nejsou hork&#233;, ale jsou p&#345;&#237;jemn&#283; tepl&#233;. M&#367;&#382;eme p&#345;&#237;padn&#283; je&#353;t&#283; p&#345;isolit nebo lehce p&#345;ipep&#345;it, i b&#237;l&#253;m pep&#345;em. Tal&#237;&#345; m&#367;&#382;eme ozdobit bazalkou.
